From its original form as White Rum, the Cask Aged Rum from Ninefold can spend almost 2 years in Virgin American Oak barrels. Naturalness is paramount to create the distinctive flavour, so the rum is not refrigerated filtered and not altered with sugar or sugar colours. The Ninefold Rum Distillery is the first and only specialised rum distillery in the South of Scotland. Owner and master distiller Dr Kit Carruthers distills rum from scratch in a converted cattle barn on his family's nearly 500 year old estate in south-west Scotland. The affiliation with the founding family is demonstrated by the seraphim, which is part of the family coat of arms of the Carruthers family and the label. Production begins with the careful fermentation of the sugar cane molasses, followed by double distillation in its copper still, through to bottling and labelling of the bottles, making Ninefold Scottish Rums a true piece of craftsmanship with an exceptional flavour profile.
Already on the nose are sweet aromas of butterscotch and caramel, accompanied by fruity notes of dried figs, cinnamon, bananas and classic oak notes on the palate. The finish is long-lasting with a peppery finish.
